Get excited. I've found the best and easiest way to make Keto-friendly chocolate truffles. And the best part? The main ingredient is Nui cookies! These truffles would be perfect to enjoy at home or to bring along to an event where you want to show off your low-carb lifestyle.

This mouthwatering treat takes only a few minutes to put together, it's no-bake, and it's made with only four ingredients: your choice of Nui Cookie, Cream Cheese, Coconut Oil and Sugar Free Chocolate (I use Lily's Dark Chocolate Chips, which are sweetened with erythritol and stevia and only 2 net carbs for 60 chips!).
These Nui Cookie Chocolate Truffles are an excellent reminder that going low carb doesn't mean your indulgence days are over. They taste sinful, but they are rich and guilt free. This recipe is actually inspired by one of my favorite easy desserts to prepare before starting my keto journey. It was made with traditional cookies, but I'd honestly say this version tastes better.
And I love that the Nui Cookie version doesn't pack on crazy calories, carbs or spike my blood sugar.
Nui Cookie Chocolate Truffles
- 4 Crumbled Nui cookies
- 4 tbsp. cream cheese
- 4 tbsp. Lily’s Dark Chocolate Chips, melted.
- 1/4 tbsp. Coconut oil melted.
Takes , serves 2.
- Mix cream cheese and Nui Cookie crumbs until well combined
- Shape into 4 (1-inch balls)
- Freeze 10 minutes
- Mix melted sugar-free chocolate with melted coconut oil
- Dip and coat cookie balls in chocolate mixture
- Refrigerate until firm
