Serving Size: 2 (or 1 if you don’t want to share!)
- 3 Nui Snickerdoodle Cookies
- 1 cup low carb vanilla ice cream (we used Rebel Creamery)
- 1/2 cup of low carb cereal (we used Magic Spoon’s Blueberry Cereal)
- Take out ice cream to thaw.
- Assemble sandwich, layering ice cream and cookies
- Add cereal to the rim of the sandwich.
You can mix and match Nui cookies and cereal flavors for endless variety. This tower would make a challenge for guests to see how many cookie sandwiches you can eat in one sitting. Let the cookie games begin!
