Why We Love Keto Peanut Butter Cookies

While we could drop the mic at ‘because we do,’ where’s the fun? Peanut butter is probably our most requested flavor of all-time. When we first considered a keto cookie, peanut butter sprung to mind, but we knew getting the flavor on-point is so essential.  

These naturally high-in-fat cookies taste delicious and take us back to childhood, but if you’re wondering, “How can I eat peanut butter cookies and stay in ketosis,” we’ll tell you.

Nui cookies are not regular cookies; each one is crammed with incredible, natural ingredients to help you stay in ketosis. When we started out, we were called Keto Kookie, and we fell hard for the keto diet.

Over the years, however, we learned that people across the country have been using our cookies for all kinds of diets. Now, we want you to find out why. From gluten-free moms to the no-grain crew, we’ve got your back.

SUGAR-FREE

Nui cookies only contain 2g of sugar, which are naturally occurring in the almond and coconut flour we use. Traditional cookies have as much as 50g of sugar; those ones your mom put in your lunchbox?

Yes, you know the ones… those have a whopping 35g of sugar per cookies. Now, we know you weren't eating one cookie a day on recess.  

We sweeten our delectable Nui delights with erythritol. We call erythritol the natural sweetener with a scientific name. Erythritol is found in fruits like grape and pear, and unlike sugar, erythritol won’t spike your insulin making it ideal for keto cookies. It’s totally natural and so delicious.   

We also gathered a few monks to meditate and give us another low glycemic sweetener, monk fruit extract. Together the meditative properties of monk fruit extract and the science of erythritol create a flavor that taste just like sugar without the sugary consequences.

Many people on a keto diet believe that erythritol and monk fruit are the best sweeteners you can opt for, and we agree. When blended, we found the ideal taste, consistency, and cost-efficiency for keto cookies.

Being very low in sugar and using premium ingredients means that many people with diabetes can enjoy our cookies guilt-free. And if you’re on a low-sugar plan, switching out your regular cookie for a Nui treat is a simple way to hit your goals without losing out on the great taste.

This is largely in part due to the monk fruit we add. Monk fruit, also known as Luo Han Guo, is a small melon native to parts of China and Thailand. It’s one of the most expensive sweeteners you can buy, but man is it worth it. It has the perfect sweetness and not weird aftertaste.

Monk fruit also contains antioxidants and is said to support the immune system, digestive tract, glands, and respiratory system. Like Stevia, monk fruit is a calorie-free sweetener with a GI of zero. Zilch. Nadda. But unlike some artificial sweeteners, monk fruit does not contain carbs.

Next up, let’s look at how we’re changing the baking game with our gluten-free flour.

KETO FLOURS

Nui cookies are baked using almond and coconut flours. This makes them incredibly accessible for diabetics, but they’re so tasty everyone will want one.

Unlike, wheat flours, our non-GMO nut flours have a tiny amount of net carbs and 6g of protein per serving. Our PB cookies have only 4g of net carbs per serving, which makes them keto and oh so delicious.

Nut flours are becoming more widely available and can be made from all kinds of nuts such as almonds, hazelnuts, and cashews. We picked almond and coconut flour for their fat profile, and yummy taste.

Almond flour is high in protein (21% by weight), manganese, vitamin E and monounsaturated fats, low in carbohydrates, and contains fiber. It’s a keto superhero.

Coconut flour is a favorite amongst paleo dieters, gluten-free eaters including those with Celiac Disease or gluten sensitivity, those with digestive problems like leaky gut syndrome, those with diabetes, vegetarians, and just about everyone else in between.

Coconut flour is not “flour” in the way we think of it; it contains zero grains, zero nuts,  and is made entirely of pure coconut. This is super important in a ketogenic cookie as the coconut comprises of MCTs, healthy saturated fats that the body uses for energy and to balance blood sugar.

So of course, we wanted to add some of this delicious flour to our cookies too. And, not to give anything away, this secret blend is what makes Nui cookies so light and fluffy.

Baking grain-free cookies is an easy way to cut out gluten, which can cause digestive upset for people with Celiacs disease and GI worries.

MCT OIL

Speaking of MCTs, what makes Nui so different is that we add MCT oil to every cookie. If you’re on a keto diet, this should be music to your ears, but for everyone else; listen up.

MCT oil, or medium-chain triglyceride (MCT) oil, contains medium-length chains of fats called triglycerides. Due to their shorter length, MCTs are easily digested, and many health benefits are linked to the way your body processes these fats.

If you’re looking to trim down, MCT oil has been shown to increase the release of two hormones that promote the feeling of fullness in the body: peptide YY and leptin (1).

MCT oil gives you a double punch with each serving of Nui cookies; you can satisfy your sweet tooth and prevent unwanted snacking later in the day.

MCTs can also be turned into ketones rapidly and is dubbed a superfuel; it means you get an energy boost but without the coffee jitters. For athletes, MCT oil can reduce lactate levels and helps the body to burn more fat.

One study found that athletes who took 6 grams or about 1.5 teaspoons of MCTs with food before cycling had lower lactate levels and found it easier to exercise, compared to those taking LCTs (2).

Another reason MCT oil is so essential is that ketones can alleviate the symptoms and help prevent many conditions such as Parkinson’s, some children with Autism, and Alzheimer's disease. One study found that a single dose of MCTs improved short-term cognition in 20 people with Alzheimer’s disease with a specific gene type, namely APOE ɛ4-negative (3).

Honestly, we could talk about MCT oil all day. But now you know what goes into our keto peanut butter cookies, it’s time to take a look at the many ways you can indulge.

Keto Peanut Butter Cookies & Nut Butter

If you’re looking for an easy way to add more fatty goodness to Nui keto peanut butter cookies, might we recommend dipping your spoon into a delicious jar of nut butter?

While you’ll want to avoid traditional peanut butter, and stick with al low-carb variation like Crazy Richards Smooth Peanut Butter, there are dozens of nut butter you can indulge in that are very ketogenic, gluten-free and delicious.

When reading the label, natural and organic nut butter should only contain 2-3 ingredients; nuts, butter, and oil and that’s it!

Nuts are an excellent source of fat and nutrients. We love Brazil nuts, macadamia nuts, and yes, even peanut butter (in moderation).

As peanuts technically aren’t “keto” - legumes are not on a strict keto grocery list, we believe a little of what you love do you good. Especially if it’s a health food. 

Besides being packed with protein, most nuts contain some of these heart-healthy substances: unsaturated fats.

It's not entirely clear why, but it's thought that the "good" fats in nuts — both monounsaturated and polyunsaturated fats — lower bad cholesterol levels. And omega-3 fatty acids. And we all need more of those.

Another way nut butter may help your heart health is by lowering the low-density lipoprotein (LDL, or "bad") cholesterol levels. LDL plays a significant role in the development of plaque that builds upon the blood vessels (4).

Be sure to work with your doctor on lowering your LDL if you are at risk of heart disease. You can do this by eating more cholesterol reducing foods like almond butter.  

We love to maximize the fatty goodness from nuts by adding almond butter to Nui PB cookies; almond butter has nearly three times as much vitamin E, twice as much iron, and seven times more calcium than peanut butter, and 25 percent more monounsaturated fat.

Two tablespoons of almond butter also have roughly 3.3 grams of fiber, while two tablespoons of peanut butter have just 1.6 grams.

This makes nut butter a great way to sneak in extra fiber and even some protein; talk about the perfect keto snack. Almond butter has less sugar than natural PB and compliments the yummy PB buttery-ness of your cookies.

PB Keto Cookies & Almond Milk

Another excellent reason to add more peanut butter keto cookies to your diet is they are a top way to add more fiber to your diet.

Most people are low in fiber, especially on keto, which can cause digestive issues and irritate the intestinal lining. Prolonged intestinal distress can result in bloating, cramping, abdominal distention, and pain.

While many people know that a lack of fiber can also cause constipation, there are plenty more great reasons to add fiber to your diet.

For example, fiber makes you feel full, so you naturally eat less. Yes, you read that right; you can eat more PB cookies and eat less, it’s called living the keto dream.

Fiber is a significant player for weight loss and can aid in reducing your daily calories (5). If you are experiencing lots of hunger on a keto diet, it may signal a fiber deficiency. Fiber is also thought to play a role in preventing type 2 diabetes.

High-fiber foods tend to have a lower glycemic index than refined carb sources, which have been stripped of fiber. Interestingly, the timing of eating fiber also counts in how your blood sugar levels respond. You should eat fiber with your carbs to minimize their impact.

This could be adding in fibrous keto fruits, like strawberries or blueberries to your snack time, or adding fiber after your workout shake.   

As Nui cookies contain 3g fiber per serving, you can also add them as a dessert to counter the insulin spike of a higher-carb meal.

Although, please note, Nui cookies are not recommended on a high-carb diet; it will only help support carbs on a low-carb diet to minimize the insulin response, not make eating a high-carb high-fat safe. That’s a recipe for disaster!

To make this next Nui snack supercharged, we’re pairing keto cookies with almond milk, which provides 3.5 grams in a 1-ounce serving of fiber. Yum.

Almond milk may be called milk and found in the dairy aisle, but almond milk is not dairy. It is “a tasty dairy-free, soy-free lactose-free alternative. It is made by crushing then straining almonds in water, to create nut milk.

Almond milk contains some of the same benefits as super-healthy almonds, like vitamin E and riboflavin. Riboflavin, or B12, helps break down proteins, fats, and carbohydrates. B12 plays a vital role in maintaining the body's energy supply.

Riboflavin also helps convert carbohydrates into adenosine triphosphate (ATP) and support the breakdown of fats.

This is super important on a high-fat ketogenic diet as you don’t want to put unnecessary stress on your liver, which is responsible for breaking down the delicious and healthy fats you eat. But even if you’re not on a keto diet, almond milk poses many health benefits and is well worth the trip to the grocery store.

Unlike traditional cow milk, almond milk is also gluten-free and doesn’t contain lactose; both of these can be a trigger to people with food sensitivities.

If you are lactose intolerant, feel free to substitute dairy milk with lactose-free milk, soy milk, almond milk, or rice milk. Almond milk has only ⅛ of the protein of cow milk so that you won’t go over your moderate protein goals.

Instructions:

One of our guilty pleasures is popping some Nui PB cookies in the oven until warm, and then dunking them into a tall glass of almond milk or macadamia nut milk.

The reason this combination works so well is that the PB keto cookies absorb all the fatty milky almondy goodness, and transports us back to childhood.

This is an awesome way to eat your keto cookies (with or without the help of kids) and even makes for a great nighttime snack. As almonds and B12 provide a natural sleep aid, these can help you rest more soundly.

Keto PB Ice Cream Sandwiches

You scream, I scream, we all scream for ice cream! On a ketogenic diet, you might be thinking all those delicious cookie sandwiches are off the menu but think again.

Adding a delicious keto ice cream to keto cookies is a great way to turn a simple lunch into a yummy dessert or a decadent snack. Simply make some fresh keto ice cream, or grab some from the freezer, and pair with oven-fresh Nui cookies.

We love to put our cookies in the oven for 2-3 minutes at 350°F, until soft and chewy. This is the perfect way to scoop up some ice cream in-between. Just embrace the mess. The keto ice cream sandwich recipe coming up is not for clean freaks, but we think you’ll love it.

First, some science.

Did you know that peanut cookies are also a great source of l-arginine, a substance that may help improve the health of your artery walls by making them more flexible and less prone to blood clots that can block blood flow?

If you have a history of heart disease or want to live longer and stronger, adding in more nuts to your diet can be a simple way to accomplish this. Some nuts contain plant sterols, a substance that can help lower your cholesterol.

So while it might seem counterintuitive to eat a diet rich in fats, the keto diet is actually how we can combat many of the leading diseases, and become healthier. Read more about being in ketosis in this handy guide.  

Each Nui cookie is made with grass-fed butter (meaning they don’t contain dairy from cows fed grains). Grass-fed cows graze on green pastures, but aside from the incredible taste, grass-fed butter has lots of health benefits.

Grass contains a lot of phytonutrients, one of which is beta-carotene, similar to vitamin A. This is the same antioxidant you’ll find in carrots and tomatoes. When shopping for grass-fed butter, you want to look for butter with a rich, creamy yellow appearance.

Typically, you can choose from three different kinds of butter:

  1. Organic butter: while eating organic is advisable. Organic butter is not strictly keto as it is not explicitly grass-fed. Many organic butter types are grass-fed, but you’ll need to check the packaging.
  2. Irish butter: this European-style butter is usually, but not always, made from grass-fed cow’s milk and has a higher fat content than regular butter. This gives it a more luxurious texture and is ideal for baking or adding to keto coffee.
  3. Ghee: this is clarified butter and an ideal addition to your keto pantry. Ghee doesn’t raise cholesterol in the way that butter can, and is available usually as a grass-fed and organic variety of butter. It’s a little more expensive, but we think it’s worth the taste.

Heavy whipping cream is a staple on the keto diet and is an ideal keto milk substitution due to its low-carb high-fat nutritional profile. If you prefer fewer calories, turn to almond milk as noted in the recipe above this one.

What we love about this PB cookie pudding recipe is it brings alive one of the best flavors we know - peanut butter and chocolate. Now, you may be thinking, “How can eating chocolate and cookies help me lose weight?” We’re so glad you asked!

One of the reasons the keto diet is so popular is its ability to suppress hunger cravings and get rid of sugar cravings.

While we love to joke about all these delicious keto desserts, the truth is many people on a keto diet very rarely reach for sweet treats; they really can be an easy treat you sneak in.

If you struggle with sugar cravings, all of the ingredients on this page help to counter this effect; from almond milk, PB Nui cookies, to fiver and l-arginine, every one of these can help reduce the insulin response and provide a full feeling.

Sugar cravings, like most addictions, are the result of unbalanced blood and brain chemistry, and these ingredients work to correct the imbalances. Our bodies are a complex machine and require different hormones and chemical responses; with insulin being very common and also very determinantal.

When you eat sugar, your insulin is kicked into action to metabolize the glucose, and this has many knock-on side effects. Below is a keto-approved recipe for chocolate pudding.

To make it extra decadent, simply grab a serving bowl and layer it with chocolate pudding, Nui cookies, and top with whipped cream.

Your guests will go coco for this incredible and easy-to-make keto dessert!  

Ingredients:

  • 1/3 cup low carb sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon stevia concentrated powder
  • 2 cups unsweetened coconut milk
  • 1/4 cup heavy cream
  • 1 teaspoon xanthan gum
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Whipped cream
  • 4 Packs Nui cookies

Instructions:

  1. Whisk together the Swerve, cocoa, and stevia in a medium saucepan.
  2. Gradually stir in coconut milk and heavy cream.
  3. Cook and stir over medium heat until mixture starts to boil. Boil and stir for another minute. Remove from heat.
  4. Sprinkle in xanthan gum, stirring to mix in thoroughly.
  5. Stir in butter and vanilla extract until incorporated.
  6. Pour into a 4-cup bowl or larger. Place plastic wrap directly on the surface to prevent skin from forming.
  7. Chill in refrigerator for several hours until thickened.
  8. Once chilled, transfer to mixing bowl and whip with an electric mixer to get the smooth and creamy texture.
  9. Place into serving dishes and layer with Nui cookies and low-carb whipped cream.
